Punchy Pesto

Pesto is a great go to for a fast but nutritious meal. Make this ahead of time and store in the fridge to be added to fresh pasta or on crusty bread.

  • 1 clove of garlic
  • 1 cup fresh basil
  • 3 tablespoons of pine nuts
  • 3 tablespoons parmesan cheese – grated
  • Extra virgin olive oil
  • Lemon juice – optional

  1. Using either a mortar and pestle or a food processor combine the garlic, basil, pine nuts and ½ the parmesan.
  2. Using a spoon to stir, add enough olive oil to bind the sauce.
  3. Season with salt and pepper.
  4. Add most of the remaining parmesan and stir to combine.
  5. Taste and continue adding olive oil and parmesan until desired taste and consistency is reached.
  6. If desired a squeeze of lemon juice can be added for some acidity.
  7. If keeping in the fridge, make sure there is a layer of olive oil sealing the top of the sauce to prevent mould.

Enjoy xx
