Punchy Pesto
Pesto is a great go to for a fast but nutritious meal. Make this ahead of time and store in the fridge to be added to fresh pasta or on crusty bread.
Ingredients
- 1 clove of garlic
- 1 cup fresh basil
- 3 tablespoons of pine nuts
- 3 tablespoons parmesan cheese – grated
- Extra virgin olive oil
- Lemon juice – optional
Instructions
- Using either a mortar and pestle or a food processor combine the garlic, basil, pine nuts and ½ the parmesan.
- Using a spoon to stir, add enough olive oil to bind the sauce.
- Season with salt and pepper.
- Add most of the remaining parmesan and stir to combine.
- Taste and continue adding olive oil and parmesan until desired taste and consistency is reached.
- If desired a squeeze of lemon juice can be added for some acidity.
- If keeping in the fridge, make sure there is a layer of olive oil sealing the top of the sauce to prevent mould.
